Christmas Salad with Pomegranate Vinaigrette

¼ cup pomegranate juice
2 tbsp white wine vinegar
2 tbsp honey
½ cup vegetable oil
¼ cup olive oil
Salt, to taste
½ cup pomegranate seeds
½ lb mushrooms, thinly sliced
4 small red & golden beets, quartered
1 head radicchio, sliced
Arugula, frisee
Candied walnuts
Blue cheese, crumbled
Directions:
1. Whisk together the vinaigrette ingredients.
2. Roast veggies & let cool.
3. Combine all ingredients & toss with vinaigrette.
