Chorizo & Potato Egg Casserole

Ingredients:

1 lb chorizo sausage, casing removed
4 medium potatoes, peeled and diced
1 tbsp olive oil
1 medium onion, finely chopped
1 red bell pepper, diced
8 large eggs
1/4 cup milk
1 cup shredded cheddar cheese
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, chopped
Directions:

Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
Cook chorizo in a skillet over medium heat until browned. Remove and set aside.
In the same skillet, heat olive oil and sauté potatoes until golden and tender, about 10 minutes.
Add onion and bell pepper, cooking until softened, 5 minutes. Mix with cooked chorizo and transfer to the casserole dish.
In a bowl, whisk eggs, milk, smoked paprika, salt, and pepper. Pour over the chorizo-potato mixture.
Sprinkle with shredded cheese and bake for 25-30 minutes, or until eggs are set.
Garnish with fresh parsley and serve warm.
