Chorizo and Halloumi Pasta
A perfect combination of smoky chorizo and salty halloumi, this dish brings a burst of Mediterranean flavors straight to your table. Ready in just 30 minutes, it’s a fuss-free dinner that’s satisfying and comforting, ideal for those cozy evenings when you need something hearty and delicious.
8.8 oz (250 g) pasta
1 tbsp olive oil
½ lb (250 g) chorizo sausage, sliced
1 large shallot, finely chopped
1 red pointed pepper, sliced
2 garlic cloves, minced
½ lb (225 g) halloumi, cubed
½ tbsp dried oregano
2 tsp smoked paprika
1 cup (200 ml) tomato sauce (passata)
2 tbsp fresh parsley, chopped
Salt and pepper to taste
Directions:
1. Cook pasta al dente. Reserve 1-2 cups of pasta water.
2. In a pan, cook chorizo for 2-3 mins. Add shallot, pepper, garlic, then halloumi, oregano, and paprika.
3. Stir in tomato sauce and reserved pasta water. Toss pasta in the sauce.
4. Garnish with parsley. Serve immediately.
