Chorizo and Halloumi Pasta

250g penne pasta
1 tsp olive oil
1 red onion, finely chopped
2 garlic cloves, peeled and chopped
2 tsp smoked paprika
1 tsp oregano
225g halloumi, cubed
200g chorizo, sliced
500ml passata
2 tsp sugar
3 tbsp double cream
50g Grana Padano, grated
2 tbsp parsley, chopped
Directions:
1. Cook the pasta until al dente. Drain, reserving 1 cup of pasta water.
2. Heat oil in a pan, fry onion and garlic for 3-4 minutes.
3. Add smoked paprika, oregano, halloumi, and chorizo; fry until golden.
4. Stir in passata, sugar, and cream; simmer for 10 mins.
5. Combine with pasta, add parsley and grated cheese to serve.
