These Chili Crisp Peanut Noodles with Crispy Halloumi are a creative twist on a classic Thai dish, bringing together vibrant flavors and textures. 8 oz rice noodles or long pasta
1/2 cup creamy peanut butter
1/3 cup tamari or soy sauce
2 tbsp honey
1/4 cup Thai red curry paste
1 tbsp fresh ginger, grated
2 carrots, shredded
2 bell peppers, thinly sliced
1 tbsp + 1/4 cup sesame oil
8 oz halloumi, cubed
6 cloves garlic, chopped
1/2 cup fresh basil, chopped
1/2 cup fresh cilantro, chopped
2 green onions, sliced
3 tbsp toasted sesame seeds
3 tbsp peanuts, chopped
2 tbsp lime juice

Directions:
1. Cook noodles as directed. Add carrots and peppers.
2. Blend peanut butter, soy sauce, honey, curry paste, ginger, and water for sauce. Toss with noodles.
3. Cook halloumi in sesame oil until golden, remove.
4. In same skillet, crisp garlic in sesame oil. Mix halloumi with garlic oil, herbs, peanuts, and lime juice.
5. Serve noodles topped with halloumi and garlic oil.
