Chili Crisp Peanut Noodles with Crispy Halloumi

8 oz rice noodles or linguine
½ cup creamy peanut butter
⅓ cup tamari or soy sauce
2 tbsp honey
¼ cup Thai red curry paste
1 tbsp fresh ginger, grated
2 carrots, shredded
2 bell peppers, thinly sliced
1 tbsp + ¼ cup sesame oil
8 oz halloumi cheese, cubed
6 garlic cloves, chopped
½ cup fresh basil, chopped
½ cup fresh cilantro, chopped
2 green onions, sliced
3 tbsp toasted sesame seeds
3 tbsp peanuts, chopped
2 tbsp lime juice
Directions:
1. Cook noodles as directed. Toss with carrots and peppers.
2. Blend peanut butter, soy sauce, honey, curry paste, ginger, and water for the sauce. Mix with noodles.
3. Crisp halloumi in sesame oil, then remove.
4. Sauté garlic with sesame oil and chili flakes. Mix halloumi with oil, herbs, and lime juice.
5. Serve noodles topped with halloumi, herbs, and sesame oil.
