Chili Crisp Peanut Noodles with Crispy Halloumi
Inspired by the spicy flavors of Thai cuisine, these Chili Crisp Peanut Noodles are tossed in a delicious peanut sauce and topped with crispy halloumi cheese. The sauce, made with peanut butter, red curry paste, and tamari, adds a perfect balance of sweet and spice. Finished with garlic oil, herbs, and sesame seeds, these vibrant noodles bring a unique twist with the addition of crispy, golden halloumi, adding a chewy bite that makes this dish truly unforgettable.
8 oz rice noodles or pasta
1/2 cup peanut butter
1/3 cup tamari or soy sauce
2 tbsp honey
1/4 cup Thai red curry paste
1 tbsp ginger, grated
2 carrots, shredded
2 bell peppers, sliced
1/4 cup + 1 tbsp sesame oil
8 oz halloumi, cubed
6 garlic cloves, chopped
1/2 cup basil & cilantro, chopped
2 green onions, sliced
3 tbsp sesame seeds
3 tbsp peanuts, chopped
2 tbsp lime juice
Directions:
1. Cook noodles, drain, and combine with carrots and peppers.
2. Blend peanut butter, soy sauce, honey, curry paste, ginger, and water. Pour over noodles.
3. Pan-fry halloumi until crisp, then cook garlic in oil until golden.
4. Mix noodles, halloumi, herbs, and oil. Serve.
