8 oz rice noodles or long pasta
1/2 cup creamy peanut butter
1/3 cup tamari or soy sauce
2 tbsp honey
1/4 cup Thai red curry paste
1 tbsp fresh ginger, grated
2 carrots, shredded
2 bell peppers, thinly sliced
1 tbsp + 1/4 cup sesame oil
8 oz halloumi cheese, cubed
6 cloves garlic, chopped
1/2 cup fresh basil, chopped
1/2 cup fresh cilantro, chopped
2 green onions, thinly sliced
3 tbsp toasted sesame seeds
3 tbsp chopped peanuts
2 tbsp lime juice
Directions
1. Cook noodles as per package instructions. Drain and combine with carrots and peppers.
2. Blend peanut butter, soy sauce, honey, curry paste, ginger, and 1/3 cup water until smooth. Pour over noodles and mix.
3. Cook halloumi in sesame oil over medium heat until golden, about 5 mins.
4. In the same skillet, cook garlic in 1/4 cup sesame oil until crisp. Toss with halloumi, herbs, peanuts, and sesame seeds.
5. Serve noodles topped with halloumi and chili garlic oil.
