1 medium onion, diced
3 cloves garlic, minced
1 can diced tomatoes (410g)
½ can tomato sauce (200g)
1 can chickpeas, drained and rinsed (1 ½ cup)
Salt and pepper to taste
1 tsp maple syrup
Directions:
1. Sauté onion in heated oil until translucent.
2. Add garlic, cook until fragrant.
3. Add tomatoes, tomato sauce, salt, and pepper; bring to a boil.
4. Stir in chickpeas and simmer for 20-25 mins.
5. Remove from heat, add maple syrup. Serve!
