1 (15 oz) can chickpeas, drained and rinsed
1 rib celery, chopped
2 tbsp sweet red onion, finely chopped
2 tbsp parsley, finely chopped
1 tbsp sliced almonds
Dressing:
1/3 cup mayo
1 tbsp lemon juice
2 tsp Dijon mustard
1 tsp apple cider vinegar
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Directions:
1. Mash 2/3 of the chickpeas, leaving 1/3 intact for texture.
2. Add celery, onion, parsley, and almonds.
3. Mix dressing ingredients; pour over chickpeas and stir.
