500g butternut squash, chopped
3 sprigs rosemary, finely chopped
4 garlic cloves, peeled
1 yellow onion, sliced
2 tbsp olive oil
500g shelf-stable gnocchi
50g Parmesan, grated
Juice of 1 lemon
30g walnuts, chopped
75ml milk
50g pancetta or prosciutto, chopped
1 ball fresh mozzarella

Directions:
1. Roast squash, garlic, and onion with rosemary in olive oil for 30 minutes.
2. Blend roasted vegetables into a purée.
3. Fry pancetta until crispy; set aside.
4. Cook gnocchi in the purée, adding milk and Parmesan.
5. Top with mozzarella and bake until melted.
