1 medium butternut squash, peeled, seeded, cubed
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
1 red & 1 green bell pepper, chopped
1/2 cup spinach, chopped
1 cup cheddar cheese, shredded
1/2 cup Parmesan cheese, grated
1/2 cup breadcrumbs
1/2 cup heavy cream
2 eggs, beaten
1 tsp dried thyme
1/2 tsp dried rosemary
Salt & pepper

Directions:
1. Roast squash, sauté aromatics.
2. Add bell peppers & spinach.
3. Combine ingredients & bake for 30-35 min.
