1 block halloumi, cubed
2 tbsp sunflower oil
2 tbsp garam masala
1 red onion, halved and sliced
1 cm fresh ginger, grated
2 garlic cloves, minced
1 tsp cumin
1 tsp coriander powder
1 tsp chili powder
1/2 tsp turmeric
425 ml passata
25 g almond flakes
100 ml heavy cream
30 g butter
1 tbsp lemon juice
Salt to taste

Directions:
1. Fry halloumi with garam masala until golden.
2. Sauté onion, ginger, garlic, and spices.
3. Add passata, almond flakes, and simmer for 10 mins.
4. Stir in cream, butter, lemon juice, and season.
5. Fold in halloumi. Serve with rice and naan.
