Butter Halloumi Curry
This Butter Halloumi Curry is a rich and decadent twist on the classic butter chicken. Instead of chicken, we’re using salty halloumi cheese, which adds a fantastic texture and flavor that pairs perfectly with the creamy tomato-based sauce. It’s named after the butter stirred into the sauce for extra richness. Serve it alongside naan and rice for a true feast – it’s comfort food at its finest and easy enough for a weeknight dinner!

5 cloves garlic
2-inch piece of ginger
6 tbsp tomato puree
1 tbsp garam masala
1/2 tsp chili powder
1 bay leaf
100 ml double cream
450 g halloumi
60 g butter
Directions:
1. Preheat oven to 220°C. Bake halloumi pieces on parchment for 15-20 mins.
2. Cook onion, garlic, ginger in oil. Add spices, water, cream.
3. Blend sauce. Add halloumi and butter. Simmer and season.
