2 tbsp olive oil
1 medium red onion, chopped
4 garlic cloves, minced
1 tbsp smoked paprika
1 tsp dried oregano
1 tsp dried thyme
2 x 400g (14 oz) tins plum tomatoes
1 bay leaf
2 x 400g (14 oz) tins butter beans
1 cup vegetable stock
225g (½ lb) halloumi, sliced
Fresh parsley, to garnish

Directions:
1. Preheat oven to 190°C (375°F).
2. In an oven-proof pan, heat olive oil over medium heat. Fry onion for 1-2 minutes until soft. Add garlic and cook for another 30 seconds.
3. Stir in paprika, oregano, and thyme. Add tomatoes, butter beans, and half of the vegetable stock. Season.
4. Place halloumi slices on top and transfer the pan to the oven. Bake for 20-25 minutes until golden.
5. Garnish with parsley and serve.
