1 tbsp olive oil
1 lb lean ground beef
1/2 onion, finely chopped
1 tsp salt
1/2 tsp black pepper
4 tbsp tomato paste
3 cloves garlic, minced
1 tsp Italian seasoning
3 cans (10 oz each) diced tomatoes with chilies, drained
1/4 tsp celery salt
12 oz egg noodles
1 1/4 cups sour cream
4 oz cream cheese, softened
1 tbsp cornstarch
2 1/2 cups Colby Jack cheese, shredded
Directions:
1. Preheat oven to 350°F. Heat olive oil in a skillet and cook onion and ground beef until browned.
2. Stir in tomato paste, garlic, Italian seasoning, celery salt, and diced tomatoes. Cook 5 more mins.
3. Cook noodles for 3 mins, reserve 2 cups noodle water.
4. Mix sour cream, cream cheese, cornstarch, and 1/2 cup noodle water.
5. Combine noodles with noodle water, layer in baking dish, top with beef mix, then cheese.
6. Bake for 25-30 mins, until bubbly.
