1 tbsp olive oil
1 lb lean ground beef
1/2 onion, finely chopped
1 tsp salt
1/2 tsp black pepper
4 tbsp tomato paste
3 garlic cloves, minced
1 tsp Italian seasoning
3 cans (10 oz each) diced tomatoes with chilies, drained
1/4 tsp celery salt
12 oz egg noodles
1 1/4 cups sour cream
4 oz cream cheese, softened
1 tbsp cornstarch
2 1/2 cups Colby Jack cheese, shredded

Directions:
1. Preheat oven to 350˚F. Heat olive oil in a skillet, cook beef and onion until browned.
2. Stir in tomato paste, garlic, Italian seasoning, diced tomatoes, and celery salt.
3. Cook noodles for 3 mins. Reserve 2 cups noodle water.
4. Mix sour cream, cream cheese, cornstarch, and reserved water.
5. Layer noodles, beef, and cheese in baking dish. Bake 25-30 mins.
