Baked Halloumi with Chickpeas and Greens
Ingredients:
225g halloumi, sliced
1 tbsp olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp chili flakes (optional)
1 can (400g) chickpeas, drained and rinsed
1 can (400g) diced tomatoes
4 cups mixed greens (spinach, kale, or Swiss chard)
Salt and pepper to taste
2 tbsp fresh parsley, chopped
Directions:
Preheat oven to 375°F (190°C).
Heat olive oil in an ovenproof skillet over medium heat. Sauté onion until soft, then add garlic and cook for 1 minute.
Stir in cumin, smoked paprika, and chili flakes, cooking for 30 seconds.
Add chickpeas and diced tomatoes. Simmer for 5 minutes, then stir in greens until wilted. Season with salt and pepper.
Arrange halloumi slices on top of the chickpea mixture.
Transfer skillet to the oven and bake for 15-20 minutes, until halloumi is golden and bubbly.
Garnish with fresh parsley and serve with crusty bread.
