1 lb Linguini Noodles
2 Avocados, peeled & pit removed
2 Egg Yolks
2 Kale Leaves
3-4 Garlic Cloves
¼ cup Extra Virgin Olive Oil
1 ½ tbsp Lemon Juice
1 tsp Kosher Salt
½ tsp Paprika
Pinch of Cayenne
1 cup Pasta Water
4-5 slices Bacon, crumbled
⅓ cup Parmesan Cheese, shredded
Directions:
1. Boil pasta in salted water. Reserve 1 cup pasta water.
2. Blend avocados, egg yolks, kale, garlic, olive oil, lemon juice, salt, paprika, and cayenne until smooth.
3. Add hot pasta water slowly to sauce, blending until smooth.
4. Mix sauce with warm pasta, add bacon and parmesan. Serve immediately.
