Chorizo and Halloumi Pasta
Chorizo and halloumi pasta is a delightful fusion of Mediterranean flavors. The smoky, spicy chorizo perfectly complements the salty, squeaky halloumi cheese, all tossed in a rich tomato-based sauce with a touch of creaminess. 250g penne pasta
1 tsp olive oil
1 red onion, finely chopped
2 garlic cloves, minced
2 tsp smoked paprika
1 tsp dried oregano
225g halloumi, cubed
200g chorizo, sliced
500ml passata
2 tsp sugar
3 tbsp double cream
50g Grana Padano, grated
2 tbsp fresh parsley, chopped
Directions:
1. Cook pasta until al dente, reserve 1 cup of pasta water.
2. Heat oil; sauté onion and garlic until softened.
3. Add paprika and oregano; cook 1 minute.
4. Fry halloumi and chorizo until golden.
5. Stir in passata, sugar, and cream; simmer 10 minutes.
6. Mix in pasta, adjust sauce consistency with reserved water.
7. Garnish with parsley and cheese.
