Slow Cooker Lamb Massaman Curry

Lamb Massaman Curry is a fragrant Thai dish that brings together tender lamb, creamy coconut, and aromatic spices. Originating from the fusion of Thai and Indian cuisines, this curry is slow-cooked to perfection, creating a melt-in-your-mouth experience. 600g lamb chuck steak, cubed
300g chat potatoes, quartered
1 brown onion, finely chopped
210g Massaman Thai curry paste
2 tbsp plain flour
2 cups chicken-style stock
400ml coconut cream
2 tbsp fish sauce
1 tbsp lemon juice
1 tbsp brown sugar
2 cups cooked white rice (to serve)

Directions:
1. Add onion, potatoes, curry paste, and coconut cream to the slow cooker; mix.
2. Stir in stock, fish sauce, lemon juice, and sugar.
3. Coat lamb cubes in flour; add to the pot and combine.
4. Cook on low for 8 hours until tender.
5. Serve over white rice and garnish with fresh herbs.
