1 1/2 lbs Brussels sprouts, trimmed and halved
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/4 cup balsamic vinegar
1 tbsp maple syrup or honey (optional)
1/2 cup dried cranberries
1/2 cup pecans, toasted and chopped
Optional: 1/4 cup crumbled goat cheese or feta
Directions:
1. Preheat oven to 400°F (200°C).
2. Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet.
3. Roast for 20-25 minutes until golden and crispy.
4. Simmer balsamic vinegar for 5-7 minutes. Stir in maple syrup or honey.
5. Toss roasted sprouts with cranberries and pecans. Drizzle with glaze.
