Spanakopita Pasta: A Twist on a Greek Classic
Ingredients :
8 oz spaghetti (or any pasta of your choice)
4 tbsp butter, divided
3 green onions, sliced
12-16 oz frozen spinach, thawed and drained
2 eggs
6 oz feta cheese, crumbled
¼ cup fresh dill, chopped
¼ tsp black pepper
Juice and zest of 1 lemon
Directions:
Cook the pasta in salted water until nearly al dente, reserving ½ cup of pasta water. Drain and set aside.
In a large pan, melt 2 tbsp of butter over medium heat and add the sliced green onions. Sauté until soft.
Add the thawed spinach to the pan, cooking until any remaining liquid evaporates.
In a bowl, whisk together eggs, crumbled feta, fresh dill, lemon zest, and black pepper.
Add the cooked pasta, egg mixture, and reserved pasta water to the spinach mixture. Stir continuously over low heat until the sauce begins to thicken.
Stir in the remaining butter and a squeeze of lemon juice for extra brightness.
Serve topped with additional feta, if desired, and enjoy this Greek-inspired pasta delight!
