French Chicken Casserole a la Normande
This classic French Chicken Casserole, also known as Chicken Normandy, is a delightful combination of rich, creamy flavors with a touch of autumnal freshness. Traditionally braised in apple cider and finished with fried apple wedges, this casserole brings the rustic, comforting taste of the French countryside to your table. The addition of bacon, herbs like thyme, and a splash of brandy gives this dish a luxurious depth. 1 tbsp olive oil
2 lbs chicken thighs and legs
Salt
4 shallots, diced
1 rib celery, diced
4-5 thyme sprigs
2 cloves garlic, minced
4 oz bacon lardons
2 tbsp brandy or whiskey
2 tbsp flour
1/3 cup chicken stock
1 ½ cups apple cider
2 apples, cut into wedges
1/2 cup heavy cream
Directions:
1. Preheat oven to 350°F (180°C).
2. Brown the chicken in olive oil, remove, and set aside.
3. Fry bacon until crispy, remove, then sauté shallots, celery, thyme, and garlic.
4. Add brandy to deglaze, stir in flour, then add chicken stock and apple cider.
5. Return chicken and bacon to the dish, bring to a boil, then bake covered for 30 mins and uncovered for 30 mins.
6. Fry apple wedges and add them along with heavy cream, bake for another 20 mins.
