Chorizo Orzo with Sun-Dried Tomatoes

2 tbsp Olive oil
4 oz Spanish chorizo, sliced or cubed
½ medium Yellow onion, diced
2 cloves Garlic, minced
1 cup Orzo pasta
½ cup Sun-dried tomatoes, chopped
2 cups Low-sodium chicken broth
½ cup Parmesan cheese, grated
¼ cup Fresh parsley, chopped
Salt and pepper to taste
½ Lemon, juiced
Directions:
1. Heat oil in skillet, add chorizo, cook until browned.
2. Add onion, cook until caramelized. Stir in orzo, toast 2-3 mins, add garlic.
3. Stir in tomatoes, mix well. Add broth, bring to boil, simmer 10-12 mins.
4. Stir in parmesan, parsley, and lemon juice. Season with salt and pepper.
