300g dried pasta
2 tbsp olive oil
2 garlic cloves, minced
1 medium onion, finely chopped
2 tsp smoked paprika
250g halloumi, cubed
1 courgette, cubed
160g mature cheddar cheese, grated
800g canned chopped tomatoes
Salt & black pepper

Directions:
1. Preheat oven to 200°C.
2. Cook pasta for 5 mins, drain.
3. Fry onion, garlic, paprika in oil for 1 min.
4. Add courgette, halloumi, fry 3-5 mins.
5. Add tomatoes, pepper, then pasta.
6. Transfer to baking tray, top with cheddar and paprika.
7. Bake for 10 mins.
