Halloumi & Butter Bean Bake

1 tbsp olive oil
1 red onion, sliced
2 garlic cloves
2 tsp smoked paprika
1 tsp chili flakes
1 tsp oregano
1 jar roasted red peppers, sliced
2 tins (800g) chopped tomatoes
1 jar (600g) butter beans
1 packet (225g) halloumi
2 large handfuls fresh spinach
Directions:
1. Preheat oven to 180°C.
2. Heat olive oil in a large ovenproof pan over medium heat. Add sliced onion and cook for 8 mins.
3. Add garlic and cook for 2 mins.
4. Stir in paprika, oregano, and chili flakes, then add peppers and tomatoes.
5. Add butter beans and halloumi. Bake for 20 mins.
6. Stir in spinach until wilted before serving.
