Caprese Dip
This Caprese Dip will be your new favorite appetizer! Inspired by the classic Italian Caprese salad, this dip combines the freshness of tomatoes and basil with the gooey, melted goodness of cheeses. It’s perfect for summer gatherings or any time you crave a delicious, comforting appetizer. Serve it with crusty bread or your favorite chips and watch it disappear in no time!
2 cups cherry tomatoes
1 tbsp olive oil
2 tbsp basil pesto
5 cloves garlic, minced
Kosher salt & black pepper to taste
1 cup sour cream
1/2 cup fresh basil, chopped
8 oz fresh mozzarella, cubed
8 oz shredded provolone
1/4 cup grated Parmesan
Bread, chips, or crackers for serving
Directions:
1. Preheat oven to 400°F. Toss tomatoes with olive oil, pesto, garlic, salt, & pepper in baking dish. Bake 15 mins.
2. Mix sour cream, basil, mozzarella, provolone, & Parmesan.
3. Combine cheese mixture with roasted tomatoes. Top with halved tomatoes.
4. Bake 20 mins. Garnish with basil. Serve warm.
