1-2 tbsp butter
1 onion, diced
2 medium carrots, diced
3 cloves garlic, minced
4 cups chicken stock
¼ cup cornstarch
1 cup milk
2 large potatoes, peeled and chopped
16 oz broccoli florets
1½ cups shredded sharp cheddar cheese
½ tsp salt
¼ tsp pepper

Directions:
1. Melt butter, sauté onion and carrots. Add garlic.
2. Add potatoes and stock, simmer.
3. Add broccoli, cook until tender.
4. Stir cornstarch into milk, add to soup.
5. Mix in cheese. Enjoy!
