Crispy Chickpeas and Halloumi with Greens and Garlicky Yogurt
This delicious vegetarian dish is an adaptation of a meat-filled recipe by Alison Roman. Spicy chickpeas, creamy halloumi, and fresh greens come together in this one-pan wonder that’s perfect for busy weeknights. The garlicky yogurt adds an extra layer of creamy tang that perfectly complements the flavors. Even swiss chard shines when paired with fried halloumi’s crispy, creamy goodness!
1 cup Greek yogurt
4 garlic cloves, minced
1 tbsp lemon juice
1 lb halloumi, sliced into slabs
1 bunch swiss chard, chopped
6 tbsp olive oil
4 cups cooked chickpeas
1 tsp cumin seeds
1 tsp crushed red pepper flakes
Salt and black pepper
Directions:
1. Combine yogurt, grated garlic, lemon juice, salt & pepper. Set aside.
2. Saute halloumi until browned on both sides.
3. In the same skillet, cook chickpeas with garlic, cumin, and red pepper flakes.
4. Saute swiss chard until wilted. Mix everything together, serve with yogurt.
