This Mediterranean Chickpea Salad is inspired by May Bsisu’s cookbook, “The Arab Table,” and has become a favorite in countless homes. The secret lies in marinating the chickpeas in a lemony cumin dressing, allowing them to soak up all the flavors. It’s a simple yet utterly delicious dish that serves wonderfully as a main course with some crusty olive bread or as a side to grilled chicken or fish. 2 cups cooked chickpeas
¼ cup red onions, diced
2 tbsp fresh parsley, finely diced
1 tomato, diced
2 Persian cucumbers, diced
1 tbsp jalapeño, finely diced (optional) Dressing:
⅓ cup olive oil
⅛ cup fresh lemon juice
2 garlic cloves, mashed
1 tsp sea salt
1½ tsp cumin
Directions:
1. Add all the salad ingredients into a large bowl.
2. In a jar, mix all the dressing ingredients and shake well.
3. Pour the dressing over the salad and mix.
4. Let marinate for 30 minutes for maximum flavor.
