Creamy Chicken and Spinach Casserole
Ingredients :
2 tbsp olive oil
1 lb chicken breast, cubed
Salt and black pepper, to taste
1 medium onion, diced
3 cloves garlic, minced
10 oz fresh spinach, roughly chopped
1 cup mushrooms, sliced
1 cup heavy cream
½ cup chicken broth
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ tsp dried thyme
½ tsp dried basil
½ tsp paprika
Directions:
Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish and set aside.
In a skillet, heat olive oil over medium heat. Season the cubed chicken with salt and pepper, then cook until browned and no longer pink. Transfer to a plate.
In the same skillet, sauté the onions and garlic until translucent, about 2-3 minutes.
Add the sliced mushrooms and spinach, cooking until the spinach wilts and the mushrooms soften.
Stir in heavy cream, chicken broth, and softened cream cheese. Mix until smooth, then add thyme, basil, and paprika. Simmer for 2-3 minutes until slightly thickened.
Return the chicken to the skillet, stirring to coat with the creamy mixture.
Transfer everything to the casserole dish. Sprinkle mozzarella and Parmesan cheeses evenly on top.
Bake for 20-25 minutes, or until the cheese is bubbly and golden.
