2 medium baking apples, peeled and chopped
½ cup light brown sugar
2 tsp ground cinnamon
1 tsp ground ginger
1 large egg
⅓ cup granulated sugar
¼ cup vegetable oil
¼ cup full-fat sour cream
2 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking soda
½ tsp kosher salt
Glaze: 1 cup powdered sugar, 1 tsp vanilla extract, 3 tbsp milk

Directions:
