Spinach & Ricotta Stuffed Shells
Delight in a comforting Italian classic with these creamy ricotta stuffed shells. Filled with a luscious blend of ricotta, mozzarella, and fresh spinach, and topped with marinara sauce, it’s the perfect family dinner that also makes for excellent leftovers!
12 jumbo pasta shells
1 ½ cups ricotta cheese
1 cup shredded mozzarella (plus extra for topping)
½ cup grated parmesan
1 large egg
1 cup fresh spinach, chopped
2 cloves garlic, minced
2 cups marinara sauce
1 tbsp olive oil
Salt and pepper to taste
Fresh basil or parsley for garnish
Directions:
1. Preheat oven to 375°F (190°C). Cook shells until al dente.
2. Sauté garlic and spinach, then mix with cheeses, egg, salt, and pepper.
3. Stuff shells, place in a marinara-covered dish, top with sauce & cheese.
4. Bake covered for 25 min, then uncovered for 10 min.
