One-Pan Harissa Chickpeas
Ingredients :
2 tsp oil
1 medium onion, thinly sliced
1 tsp balsamic vinegar
½ tsp salt, divided
1 tbsp garlic paste or 4 cloves garlic, minced
1 tsp smoked paprika
2 tbsp harissa paste
½ tsp dried oregano
2 cups chopped leafy greens (e.g., Swiss chard, spinach)
15 oz can chickpeas, drained
1 cup full-fat coconut milk
Lemon juice, fresh cilantro, and black pepper, for garnish
Directions:
In a large pan, heat oil over medium heat. Add sliced onion and ¼ tsp salt; sauté until caramelized, about 5-7 minutes.
Stir in balsamic vinegar to enhance the caramelization.
Add garlic paste, smoked paprika, harissa paste, and dried oregano. Cook for 1 minute until fragrant.
Add chopped leafy greens, stirring until slightly wilted.
Mix in the drained chickpeas and pour in the coconut milk, stirring well.
Lower the heat and simmer for 10 minutes, allowing the flavors to meld.
Garnish with a squeeze of lemon juice, fresh cilantro, and a sprinkle of black pepper. Serve warm with flatbread or rice.
