Jackfruit Tacos

Pulled Jackfruit Tacos are a flavorful vegan twist on classic carnitas! Young jackfruit is known for its meat-like texture and ability to absorb flavors perfectly, making it an amazing substitute for pulled pork. In this recipe, smoky chipotle, tangy lime, and a hint of agave sweetness come together to create a vibrant taste experience. Paired with creamy avocado sauce, these tacos are a perfect addition to your next Taco Tuesday!

1 tbsp olive oil
1/2 onion, sliced
2 (20-oz) cans young jackfruit, drained
1 cup vegetable broth, divided
1 tbsp tomato paste
2 tbsp soy sauce
2 chipotle peppers in adobo, chopped
3 garlic cloves, minced
2 tsp chili powder
1 tsp cumin
2 tbsp agave syrup
2 tbsp fresh lime juice
Salt, to taste

Directions:
1. Sauté onion in olive oil until soft.
2. Add jackfruit and 1/2 cup broth. Simmer 10 mins, mash.
3. Add remaining broth, tomato paste, soy sauce, peppers, garlic, chili powder, cumin, agave, and lime juice. Cook until flavorful.
4. Serve with avocado sauce and tortillas.
