2 tbsp Olive oil
450g Halloumi, cut into chunks
300g Pasta (your preference)
1 Onion, finely chopped
3 cloves Garlic, crushed
300g Broccoli, cut into florets
250g Cherry tomatoes, halved
2 tsp Sweet smoked paprika
500g Passata
Sea salt and freshly ground black pepper
Directions:
1. Heat 1 tbsp olive oil over medium heat. Fry halloumi chunks until golden (about 5 minutes), then set aside.
2. Cook pasta in salted water. After 5 minutes, add broccoli to the pot.
3. Add remaining oil to the pan, sauté onions and garlic until soft. Add cherry tomatoes, smoked paprika, passata, salt, and pepper. Cook for 5 more minutes.
4. Drain pasta and broccoli, mix with the sauce, top with halloumi, and serve.
