Cowboy Casserole is a hearty classic from the Midwest, loved for its comforting flavors and easy prep. With ground beef, potatoes, and cheese, it’s the ultimate family favorite for weeknights or gatherings.

1 lb ground beef
1 medium onion, chopped
3 cloves garlic, minced
1 can (10.75 oz) cream of mushroom soup
1/2 cup milk
1 can (15 oz) kidney beans, drained and rinsed
1 can (14.5 oz) diced tomatoes with green chilies
1 cup frozen corn
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
4 cups potatoes, thinly sliced
1 cup shredded cheese (cheddar recommended)

Directions:
1. Brown ground beef with onion and garlic; drain excess fat.
2. Transfer to slow cooker. Add soup, milk, beans, tomatoes, corn, chili powder, salt, and pepper. Mix well.
3. Layer sliced potatoes on top, coating evenly.
4. Cook on low for 6–7 hours or high for 3–4 hours.
5. Sprinkle cheese on top for the final 20 minutes.
