Falafel is a popular Middle Eastern street food that’s not only delicious but also packed with protein and fiber. Originally made as a vegetarian option, it’s now a favorite for anyone who enjoys flavorful and crispy bites. Traditionally made with dried chickpeas, falafel is best served with pita, tahini sauce, and fresh veggies. This recipe uses classic spices like cumin and coriander, providing an authentic taste that’s crispy on the outside and fluffy on the inside. Perfect for wraps, salads, or just as a snack!

1 cup dried chickpeas
1/2 large onion, roughly chopped
1/2 cup fresh parsley, finely chopped
1/4 cup cilantro, finely chopped
1 tsp salt
4 garlic cloves
2 tsp cumin
1 tsp ground coriander
1 tsp baking powder
4 tbsp chickpea flour

Directions:
1. Soak chickpeas for 24 hours.
2. Drain and place all ingredients (except flour & baking powder) in a food processor. Blend until grainy.
3. Add flour and baking powder, mix well.
4. Form into balls, chill for 1 hour.
5. Fry in oil until golden.
