Chorizo and Halloumi Pasta
Chorizo and Halloumi Pasta is a Mediterranean-inspired delight, blending the smoky richness of chorizo with the salty goodness of halloumi. Ready in just 30 minutes, this dish is perfect for cozy weeknight dinners when you want something hearty and bursting with flavor. The combination of chorizo, halloumi, and a rich tomato sauce will take your tastebuds straight to the Mediterranean.
8.8 oz (250 g) pasta
1 tbsp olive oil
½ lb (250 g) chorizo sausage, sliced
1 large shallot, finely chopped
1 large red pointed pepper, sliced
2 large garlic cloves
½ lb (225 g) halloumi cheese, cubed
½ tbsp dried oregano
2 tsp smoked paprika
1 cup (200 ml) tomato sauce
2 tbsp fresh parsley, chopped
Salt & pepper to taste
Directions:
1. Cook pasta al dente. Reserve 1-2 cups of pasta water.
2. Cook chorizo in olive oil until browned. Add shallot & red pepper; cook 2-3 mins.
3. Stir in garlic, then add halloumi, oregano, & paprika.
4. Add tomato sauce & reserved water. Simmer.
5. Add pasta & toss well. Garnish with parsley.
