1 1/2 lbs chicken breast, diced
1 tsp kosher salt
1 tsp smoked paprika
1 tsp dried oregano
1/2 onion, minced
3 cloves garlic
1 tsp fresh ginger, grated
1/4 cup chicken broth
1 1/4 cups light coconut milk
1 tbsp tomato paste
3 cups jasmine rice, cooked
Fresh cilantro

Directions:
