1 tbsp cooking oil
1 onion, diced
2 cloves garlic, finely chopped
1 tsp fresh ginger, finely chopped
4 whole dried cloves
2 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
½ tsp ground cinnamon
½ tsp cayenne pepper (to taste)
Pinch of salt
1 can (400g) chickpeas, drained
1 can (400g) chopped tomatoes
½ cup vegetable stock
1 cup fresh spinach
Handful of chopped fresh cilantro

Directions:
1. Heat oil in a pan over medium heat, add onions, and cook until soft.
2. Stir in garlic, ginger, cloves, turmeric, cumin, coriander, cinnamon, and cayenne. Cook for 1 minute.
3. Add chickpeas, tomatoes, and vegetable stock. Simmer for 10 minutes.
4. Stir in spinach until wilted. Serve garnished with cilantro.
