2 tbsp coconut oil
1 onion, diced
1 serrano pepper, finely diced
1/2 tsp salt
1.5 lbs boneless chicken thighs, cut into pieces
4 garlic cloves, minced
2-inch fresh ginger, grated
2-3 tbsp curry powder
1 tsp cumin, 1 tsp turmeric, 1 tsp black pepper
1/2 tsp chili powder
14.5 oz can crushed tomatoes
1.5 lbs sweet potatoes, cut into chunks
400 ml full-fat coconut milk
3 cups baby spinach
Lemon juice, cilantro
Directions:
1. Sauté onion, pepper, salt in oil. Add chicken; cook until browned.
2. Stir in garlic, ginger, spices. Add tomatoes, sweet potatoes, and coconut milk.
