6 bone-in, skin-on chicken thighs
Salt and pepper to taste
2 tbsp unsalted butter
8 oz cremini mushrooms, halved
3 large shallots, diced
2 ribs celery, diced
3 cloves garlic, minced
3 tbsp all-purpose flour
½ cup dry white wine
2 cups chicken stock
1 lb baby gold potatoes, halved
4 sprigs thyme
1 sprig rosemary
1 bay leaf
¼ cup heavy cream
Directions:
1. Preheat oven to 325°F.
2. Season chicken with salt and pepper. Sear in butter until golden brown.
3. Add mushrooms, shallots, and celery; cook until tender.
4. Stir in garlic, flour, then deglaze with wine.
5. Add stock, potatoes, herbs, and return chicken. Bake 45 min at 325°F.
6. Stir in cream, adjust seasoning, and serve.
