2 tbsp olive oil
450 g halloumi, cut into chunks
300 g pasta
1 onion, finely chopped
3 cloves garlic, crushed
300 g broccoli, cut into small florets
250 g cherry tomatoes, halved
2 tsp sweet smoked paprika
500 g passata
Sea salt & black pepper
Directions
1. Heat olive oil in a sauté pan over medium heat. Fry halloumi until golden (5 mins).
2. Cook pasta in salted water. Add broccoli after 5 mins.
3. Remove halloumi, fry onion & garlic until soft.
4. Add tomatoes, paprika, passata, salt & pepper. Cook for 5 mins.
5. Drain pasta & broccoli, mix with sauce, top with halloumi.
