Slow Cooker Pot Roast

3-4 lb chuck roast
4 Tbsp olive oil
Spice Rub: 2 tsp brown sugar, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp black pepper
1 yellow onion, quartered
6 garlic cloves, smashed
2 tsp brown sugar, 2 tsp Italian seasoning
½ tsp chili powder, 3 tsp soy sauce
32 oz beef broth
1 ½ lbs baby potatoes, halved
1 ½ lbs carrots, cut into 3″ pieces
4 sprigs each of fresh rosemary & thyme
Directions:
1. Pat roast dry, rub with spices, and sear in a pan.
2. Transfer to slow cooker.
3. Sauté onion and garlic, add to slow cooker with broth, potatoes, and carrots.
4. Cook on low for 4 hours.
