2 tbsp coconut oil
1 onion, diced
1 serrano pepper, finely diced
1/2 tsp salt
1.5 lbs boneless chicken thighs, cut
4 garlic cloves, minced
2-inch fresh ginger, minced
2-3 tbsp curry powder
1/2 tsp Indian chili powder
1 tsp garam masala
1 tsp ground cumin
1 tsp turmeric powder
1 can (14.5 oz) crushed tomatoes
1.5 lbs sweet potatoes, cubed
1 can (13.5 oz) coconut milk
3 cups baby spinach, chopped
1-2 tbsp lemon juice
1/4 cup cilantro, chopped

Directions:
1. Heat oil in a large pan. Sauté onion, pepper, and salt until soft.
2. Add chicken and brown. Stir in garlic, ginger, and spices.
3. Add tomatoes, sweet potatoes, and coconut milk. Simmer for 15 mins.
4. Add spinach and cook until wilted. Stir in lemon juice and cilantro.
