1 tbsp olive oil
5 cloves garlic, minced
1/2 cup sun dried tomatoes, chopped
1/2 tsp oregano
1/2 tsp red chili flakes
1 tsp salt
1/4 tsp ground black pepper
2 (15 oz) cans chickpeas, drained and rinsed
1 cup vegetable broth
1 tbsp tomato paste
1 cup vegan cream
2 cups baby spinach, sliced
4-5 fresh basil leaves, chopped
Optional: 1/2 cup grated vegan parmesan cheese

Directions:
1. Heat olive oil over low-medium heat, add garlic, cook until fragrant.
