1 kg (2 lb) butternut squash, diced
4 cloves garlic, minced
500 ml (2 cups) vegetable stock
100 g (1 cup) Grana Padano, grated
500 g (1 lb) penne pasta
1 tbsp olive oil
Directions:
1. Cook pasta according to package instructions. Drain and set aside.
2. Sauté garlic in olive oil over medium heat until fragrant.
3. Add squash and cook for 5 mins. Pour in stock, simmer until tender (15-20 mins).
4. Blend squash with stock until smooth.
5. Combine sauce, cheese, and pasta. Serve hot.
