3 Chicken Breasts (diced)
225g Chorizo (sliced)
1 Red Onion (finely diced)
4 Garlic Cloves (crushed)
1 Red Pepper (diced)
1 Orange Pepper (diced)
500ml Chicken Stock
400g Chopped Tomatoes
220g Long Grain White Rice
2 tbsp Cajun Seasoning

Directions:
1. Brown chicken in a large non-stick pan; set aside.
2. Cook chorizo until oil is released; add onion and garlic, cook until softened.
3. Add chicken, peppers, tomatoes, rice, stock, and seasoning.
4. Simmer, cover, and cook for 30 minutes, stirring occasionally.
